Default The right pan ?

Hi i have been making fudge for the last year or so with a cast iron pot .i am now in the process of starting a small buissnes up, making and selling it but would need a bigger an better pan ,i know copper is the best but what size and where is the best place to buy from .regards Michael

Thanks ,looked at vantage shop some very impressive stoves a bit out of my price range at the momment but one for the future i hope
