Description:
Chicken stock made using the leftover chicken carcass,great for soups,gravies and risotto.
Other: Ingredients:
Time:
3 1/2 hours
Difficulty:
Easy
Serving Size:
Makes 1.5 litres
  1. 1 chicken carcass
  2. 2 litres of water
  3. 1 onion,peeled and halved
  4. 2 celery sticks,roughly chopped
  5. 2 carrots,roughly chopped
  6. 2 garlic cloves,squashed
  7. 10 black peppercorns
  8. 3 bay leaves
  9. 1 sprig of rosemary
Instructions:
  1. Place all the ingredients in a large stockpot
  2. Bring to the boil,cover with lid and reduce the temp
  3. Simmer for about 3 hours,skimming every now and then
  4. Strain the stock through a fine colander
  5. Cool the stock

I've forgot to mention the stock will keep in the fridge for a couple of days or in the freezer for about 3 months
