Description:
Chicken stock made using the leftover chicken carcass,great for soups,gravies and risotto.
Other:
Ingredients:
Time:
3 1/2 hours
Difficulty:
Easy
Serving Size:
Makes 1.5 litres
1 chicken carcass
2 litres of water
1 onion,peeled and halved
2 celery sticks,roughly chopped
2 carrots,roughly chopped
2 garlic cloves,squashed
10 black peppercorns
3 bay leaves
1 sprig of rosemary
Instructions:
Place all the ingredients in a large stockpot
Bring to the boil,cover with lid and reduce the temp
Simmer for about 3 hours,skimming every now and then
Strain the stock through a fine colander
Cool the stock

I've forgot to mention the stock will keep in the fridge for a couple of days or in the freezer for about 3 months
