Question How to cook pork successfully!!

I never seem to be able to cook pork chops without them turning out tough! Any tips on what I might be doing wrong, or better still what I should do right, would be welcome please.

I may be right in thinking (correct me if i'm wrong) that you are over-cooking your pork,quality pork nowadays can be cooked slightly under-done,not to under-done but just slightly.Other factors could be that you do not rest your meat for long enough,so the meat has time to relax.Also if you marinade the meat prior to cooking that will also help tenderize and impart some lovely flavourings into the pork.

Thanks Cookie Monster - yes, you're probably right, I do tend to overcook things as I'm always worried about undercooking I'll try the marinades as well

Hi Pat,

I'd have to agree with cookie.

I use a marinade of garlic, ginger, chili, lime and orange juice and zest.

I managed to cook pork chops successfully tonight! They weren't tough at all! I made a marinade of lemon juice, chilli and garlic flakes and olive oil and left them in it all afternoon, then cooked them in the oven with roast potatoes, roast parsnips and carrots! They were defrosting while they were in the marinade as well, so I don't know if that made a difference. Anyway, thank you for all your tips, something seems to be rubbing off!
