Default Quick n easy recipes

As a teenager, I get hungry quite a lot. So I'm looking for some quick n easy recipes to use. Something that doesn't require dirtying a lot of pots, pans, etc. I'm not looking for snacks, more mealy type things. I do sandwiches a lot, but I like a little bit of variety. Any suggestions?

Tomato-Zucchini Frittata

Ingredients:

1 tbl olive oil
1 x zucchini sliced
1/2 cup chopped green onion
2 x garlic cloves peeled, chopped
2 med tomatoes seeded, chopped
1 tbl chopped fresh basil
1/4 tsp freshly-ground black pepper
2 x eggs
4 x egg whites
1 cup shredded mozzarella cheese

Method:
Preheat oven to 350 degrees.

In an oven-safe skillet, heat olive oil and saute zucchini, green onions and garlic. Cook for about 5 minutes.

Add tomatoes, basil and pepper. Cover and cook another 3 minutes or until zucchini is tender.

In a small bowl, beat together eggs and egg whites. Pour over vegetable mixture and sprinkle with cheese.

Cook until bottom sets and mixture is starting to bubble through, place under grill until firm and cooked.

Cut into wedges to serve.

By substituting egg whites for some of the eggs, this frittata is lighter and healthier than usual.

Fajitas are good and really quick, chicken, peppers, onions, in a wrap with salsa etc
pork burgers, sausage meat, onions, dried sage mix and shape then grill
If you have time to leave a pot in the oven then a beef stew. carrott, onion, stock cube, braising steak, can of bitter, corn flour for thickening at the end. cook for 3 hrs in the oven.
Stir Frys
roasted vegies with garlic
what type of things do you like??

Incredibly easy and quite tasty:
Creamy cheese pasta

slice bacon, chicken and mushrooms and fry while cooking pasta according to packet.
When pasta is almost cooked, mix into other pan with chicken and add 1/4 pack of soft cheese (eg. Philladelphia)

Takes about 10 minutes to cook, uses two pans, I know it's cheating but when I can't be bothered to cook, it's warm and beats sandwiches!

As you are growing you probably want some good protein to make sure you grow in the right direction (upwards not outwards!).

Try this bad boy:

Curried Salmon Fillet:
Get some Greek Yoghurt
Pour a few spoonfulls into a bowl
Put in a teaspoon of curry powder, stir in
Smear over the top of the salmon with a spoon
Stick under the grill for 10 mins or until cooked and Bob is your uncle.
Serve with some mash or steamed veg

All you have to wash up is the spoon and the bowl (use foil on the grill pan/tray).

1 or 2 handfuls of rice covered with water and brought to the boil then turn off and leave for about 10 minutes while you chop and avocado and either some smoked mackeral or salmon. Mix together with the drained rice and add some lemon juice and black pepper.
