Mince ragu w/pasta

1 onion
1 carrot
1 celery stick
2 tbsp olive oil
500g mince beef (lower than 10% fat if poss)
small glass of milk
2 x 400g cans of chopped tomatoes
large glass white wine
2 tbsp tomato puree


Peel & chop onion carrot & celery, fry for 5 mins until soft. Add in the beef & cook for about 10 mins until no traces of pink & grains seperate. Reduce heat pour in milk & simmer until milk almost evaporated. Stir in tomatoes & puree with some salt & pepper bring to boil, reduce heat, cover & cook for 1 hr. Add your cooked pasta of choice.

I'm cooking this tonight for the family,one of their fav's.

Spaghetti with Pork and Fennel Meatballs.

500 grams good quality pork mince
2 red chillies finely chopped
2 garlic cloves finely chopped
8 spring onions finely chopped
2 tbs crushed fennel seeds
2 tsp fresh thyme leaves
4 tbs grated parmesan cheese

Enough tomato & basil sauce to cover the meatballs
500 grams spaghetti or tagliatelle

METHOD
Mix the first 7 ingredients together,add salt and pepper.
Shape the mixture into small balls,you should get about 24.
Place the balls in the fridge for about 1 hour to firm up.
Seal the meatballs in a little olive oil in a oven proof dish.
Pour over your prepared tomato sauce.
Sprinkle with extra parmesan.
Place in the oven for about 30-40 mins,gas mark 6.
When the meatballs are about 8 mins from being cooked,cook the spaghetti.
Serve the meatballs on a bed of the cooked spaghetti.

SERVES 4-5 Enjoy

Really easy one, pasta creme fresh and pesto mix together could add bacon or chicken or prawns etc

I just do a very simple pasta sauce using:

One tin of chopped toms
One tin of Plum Toms
One Table Spoon of Tom Puree
One Red Onion (Finely chopped)
2 Cloves of Garlic (Pressed) or Garlic Powder
A few drops of Worcestershire Sauce or Tobasco
Basil, Parsley, Paprika, Chilli Powder (All to suit)
Pancetta, Salami, Pepperoni
Any pasta although I just use spaghetti.

Sweat your onions in some butter until nice and soft. Mix in toms, garlic, herbs, spices to your sweated onions. Bring to the boil then simmer. Add the meat and heat for 5 minutes. In the meantime, cook your pasta to taste.
Season tomato sauce to taste with Salt, Pepper and Worcestershire Sauce/Tobasco.

By the way, this is the same sauce I make for my spag bol and lasagne. I just add Mince Meat and some veg. I put enough veg in it that I actually call it my 5 a-day spag bol.

My OH's favourite creamy chicken, bacon & mushroom pasta. I don't follow any real quantities.

Chopped onion, garlic and bacon fried (with a light spray of oil), chicken thighs chopped & added, mushrooms sliced & added to pan. Turn heat to low & add light evaporated milk and a little wholegrain mustard. I also add a little cornflower mixed with a little bit of water and add gradually to simmering pan to thicken to my liking. This is all going on whilst I have pasta of choice boiling in another pot.
Salt and pepper to taste.
Drain pasta and add to sauce mix.
Sometimes I add a little chopped parsley or chives (depending on mood).
Serve topped with fresh parmesan cheese (grated or shaved).
