almond mint surprises

something different to give as a dessert at a dinner party or a special meal.
| | Other: | Ingredients: | | Time: 40 Difficulty: Easy Serving Size: 8 | - 125g butter
- 1/3 cup caster sugar
- 3 eggs
- 3/4 cup S R flour
- 1/4 cup cocoa
- 1/4 ground almonds
- 32 after dinner mints
- 1 tblsp apricot jam
- 1 tblsp creme de menthe
- Mint cream
- 300ml thickened cream
- 2 tblsp icing sugar
- 1 tblsp creme de menthe
- green food colouring
| | Preparation: | - grease 19cm square cake tin ,cover base with grease proof paper ,cake can be made up 2 days ahead ,you only use half the cake so you can freeze the other half down and use at a later date turn oven 180c 350f gas mk 4
| | Instructions: | - 1.combined sugar and butter with electic mixer until light and fluff,
- 2.add eggs 1 at a time beat well fold in sifted flour and cocoa and almonds.
- 3. spread mixture into prepared tin,cook for 25 mins or till firm to touch.
- 4.stand for 5 mins before you put on cooling rack.
- 5.cut cake in half trim edges cut into 8x4cm squares
- 6. thinly spread smooth sides of mints with jam ,then press onto edges of cakes and make a box. sprinkle each box with a little liqueur.
- 7.to make mint cream. whip cream, sifted icing sugar
- and liqueur till you get firm peaks form add a hint of green colouring place into piping bag and pipe into top of squares and then enjoy you can serves with single cream or just have it plain .
