Description:
Tomatoes are packed with antioxidants, particularly when processed, which makes tomato soup a wonderfully guilt-free comfort food
Other: Ingredients:
Time:
30 - 50 minutes
Difficulty:
Easy
Serving Size:
4
  1. 30 ml olive oil
  2. 900g British Classic Tomatoes, halved
  3. 2 garlic cloves
  4. 1 small potato, peeled and sliced
  5. 300 ml water
  6. vegetable stock
  7. 5 ml sugar
Preparation:
  1. on top of the ingredients you will need -
  2. roasting tin
  3. food processor or blender
  4. saucepan
Instructions:
  1. Lightly oil a roasting tin. Arrange the tomatoes, cut side uppermost in the roasting tin. Add the garlic cloves. Season and drizzle over the remaining oil. Roast in the oven at 190°C (375°F/Gas mark 5) for 30 minutes.
  2. Boil the potato in 300ml water until tender. Do not drain the water.
  3. Skin the tomatoes and the garlic and put the tomato pulp and garlic into a food processor or blender with the cooked potato and potato stock and blend until smooth.
  4. Transfer to a saucepan. Add a little extra vegetable stock or water if the soup is too thick. Stir in the sugar.

Thank you, I can only do what I hope my guests would like, but glad the feedback is good so far lol

and for once, i think i am doing great, we are about to clear all our personal debts and in one fell swoop ( tax rebate ), that's the bricks off my shoulders lol

Salty I'm a bit short of British classic tomatoes at the moment, lol, could I use Tasmanian Iconic tomatoes instead?

Although i have never tried 'Tasmanian Iconic tomatoes' , i am sure they will be fine lol

Tomato soup and a grilled cheese sandwich is great comfort food for me. I love to dip the sandwich in the soup. Must be one of those retro things, aye, Cookie!
