Porkless!

Hi,
am new at this but need some advice. As a former vegetarian but now carnivore I still do not eat pork, however all the recipes for Christmass stuffing seem to call for pork, does anyone have a suggestion of something I could use instead. I was watching Hugh last night and really fancy doing turkey the way he suggests but with a porkless stuffing, any help?
